Cook the rice: pour 700ml of water into a saucepan, bring to a boil, add the rice and stir. Once it boils again, reduce heat to low and cook covered for 12–14 minutes (until all the water is absorbed).
While the rice cooks, prepare the other ingredients: cut the chicken fillet into strips, slice the mushrooms, julienne the pepper, cut the onion into half-rings, and coarsely chop the cilantro.

In a wok or regular deep pan, heat the oil and fry the chicken until fully cooked. Transfer to a bowl and set aside.

Add the onion to the pan and sauté, stirring occasionally, until translucent. Add the bell and chili peppers and continue cooking until soft. Transfer to a bowl and set aside.

Add the mushrooms to the pan and sauté until fully cooked.

Add the chicken, onion, pepper, cilantro, lemon juice, grated ginger, and salt to the mushrooms. Mix well.

Add the rice to the vegetables and chicken, stir, and heat together for 1–2 minutes.
