Creamy Potato and Leek Soup

Creamy potato and leek soup is a tender and flavorful dish. Perfect for cold days.Main ingredients: potatoes, leeks, cream, butter, chicken broth, spices. Serve with croutons.

| Carrot | 1 piece |
| chicken broth | 1 liter |
| leek stem | 2 piece |
| Onion | 1 piece |
| Pepper | to taste |
| Potato (medium) | 3 piece |
| Salt | to taste |
Step 1
Wash the leek, trim off the green leaves and roots, and slice the white part into rings. In a deep pot, melt the butter, add the peeled and chopped onions, carrots, and leek. Cook over low heat, stirring occasionally, until soft but without browning.
Step 2
Add the peeled and chopped potatoes to the pot, season with salt and pepper, and cook for about 5 minutes. Then pour in the hot broth, bring to a boil, reduce the heat. Cover and simmer for 30–40 minutes until the potatoes are tender.
Step 3
Blend the soup with a blender until smooth. Add cream when serving, if desired.
