Wash the leek, trim off the green leaves and roots, and slice the white part into rings. In a deep pot, melt the butter, add the peeled and chopped onions, carrots, and leek. Cook over low heat, stirring occasionally, until soft but without browning.

Add the peeled and chopped potatoes to the pot, season with salt and pepper, and cook for about 5 minutes. Then pour in the hot broth, bring to a boil, reduce the heat. Cover and simmer for 30–40 minutes until the potatoes are tender.

Blend the soup with a blender until smooth. Add cream when serving, if desired.
