Defrost the squid, pour boiling water over them, remove the film and insides, and take out the chord (thin cartilage). Cut the fins into thin strips. Wash the mushrooms, slice them, and fry in vegetable oil. Peel and finely chop the onion. Grate the carrot. Boil the eggs for 10 minutes, then cut into strips. Grate the cheese. Combine everything in a bowl, including the fins, and mix well.

Lightly salt and pepper, and stuff the squid with a teaspoon. Seal the edge of the squid with a toothpick. Grease a pan or baking dish with oil and place the squid stuffed with mushrooms and cheese.

Place in a preheated oven at 180°C for 15 minutes. 5 minutes before done, grate cheese and sprinkle over the squid.
