Press the cottage cheese through a sieve to remove any lumps. Any cottage cheese will work, even ricotta.

Grate the butter on a coarse grater. Add vanilla (or vanilla sugar, or vanilla essence).

Mix well.

Add flour and salt, mix and place the dough on a work surface. Quickly roll it into a ball. The dough may take a little more flour, depending on the moisture content of the cottage cheese. But don't overdo it, otherwise the cookies will turn out hard.

Roll out the dough to about 3-5 mm thick. To prevent the dough from sticking to the rolling pin or table, it's best to roll it out between two sheets of parchment paper. This way both the rolling pin and table stay clean, and you don't need to add much flour.

Cut out cookies with your favorite cookie cutters. Place on a baking sheet with parchment paper. Lightly sprinkle each cookie with sugar (I use brown sugar for a more caramel flavor). Bake in a preheated oven at 200°C for 25-30 minutes until the cookies are golden brown.

Place the finished cookies on a wire rack to cool. That's it! The cottage cheese cookies - slightly crispy, moderately sweet, a little salty, incredibly fragrant, tender and buttery - are ready.
