Then I lightly fried half an onion and one clove of garlic in olive oil. I didn't crush or chop the clove to avoid such a pronounced garlic flavor.

Pour water (or broth) into a saucepan and add the cabbage, the contents of the frying pan and saffron. Let the cabbage cook. You need just enough water to barely cover the cabbage.

When the cabbage is ready, blend the soup and put it back on the heat to boil. Add salt. I topped it with croutons. That's the whole soup. Kids love it - bright with round croutons. Enjoy!
