Omelet with potatoes - with crispy crust

Omelet with potatoes and cheese is a hearty breakfast dish where a tender egg base combines with crispy potatoes and melted cheese. Potatoes are first fried until golden brown, then poured with beaten eggs and milk and sprinkled with grated cheese. You can add herbs, ham or mushrooms for variety. Served hot with vegetables or toast. Great way to use leftover boiled potatoes.
