Cannelloni with mushrooms and feta - Italian classic
Italian pasta stuffed with mushrooms and cheese, baked to golden perfection.

| oyster mushrooms | 600 g |
| Onion | 200 g |
| Salt | 1 tsp |
| Garlic | 6 clove |
| bryndza | 250 g |
| green onion | 1 bunch |
| Parsley | 0.3 bunch |
| Dill | 0.3 bunch |
| cilantro | 0.3 bunch |
| Vegetable oil | 25 ml |
| cream 33-38% | 350 ml |
| Quail eggs | 7 pc. |
| dried basil | 1 tsp |
| dried thyme | 1 tsp |
| Hard cheese | 100 jar |
| Ground pepper | to taste |

Finely chop mushrooms and onions, fry until golden. Drain. Chop herbs, crumble brynza, crush garlic. Mix everything with 0.5 tsp salt and pepper.

Boil cannelloni for 3 minutes until semi-soft. Drain.

Cut into two crosswise.

Stuff each half with mushroom filling. Place in baking dish.

Make sauce by mixing cream, quail eggs, thyme and basil. Add 0.5 tsp salt.

Pour sauce over cannelloni, sprinkle with cheese. Bake at 180°C for 40 mins. Top with cheese and herbs before serving.
