Grind almonds in a food processor, add sugar, and blend until smooth.

Split the vanilla pod lengthwise and scrape out the seeds.

Mix the seeds with sugar. Whisk egg whites to a foam, gradually adding sugar until it reaches meringue consistency (not too dry), add almond mixture, and stir quickly (the batter should be runny).

Line a baking tray with parchment paper, pipe 4 cm round cookies using a piping bag. Let them sit for 30–40 minutes until firm. Preheat the oven to 150°C and bake for 8–10 minutes. Let cool.

Take chocolate spread and apply it to one cookie, then top with another. You can choose any filling you like.
