In a mixer, combine one cup of flour with salt. On low speed, gradually add 255 g of butter, then the remaining flour and cold water. Mix into a smooth dough. Wrap in plastic, shape into a disk, and chill for at least an hour.

Grease a removable pie form with butter and line with parchment. Roll out the dough on a floured surface, place into the form, and create an edge. Chill for 20 minutes.

Preheat the oven to 160°C. Line the dough with parchment and fill with a weight (beans or rice). Bake for 30–40 minutes until golden. Carefully remove the weight and let the crust cool. Keep the oven on.

For the filling, heat 1 tbsp of oil in a large skillet. Add chopped mushrooms, season with salt and pepper, and cook for about 5 minutes. Reduce heat, add butter, onion, and thyme. Cook for another 12 minutes until mushrooms are done. Season again. Let cool.

Place one-third of the cheese and half of the mushrooms on the bottom of the cooled base. In a blender, mix milk, cream, eggs, 1.5 teaspoons of salt, a few peppercorns, and a pinch of nutmeg until smooth. Pour half of the mixture over the mushrooms. Cover with another third of the cheese and the remaining mushrooms. Pour the remaining milk mixture on top and sprinkle with the remaining cheese.

Bake for about 1.5 hours. Let it cool. Remove the pie from the mold and transfer to a serving dish.
