Start by blanching the broccoli: put the florets into boiling salted water for 5 minutes, drain, and plunge into ice water to preserve the bright green color, then drain thoroughly.

Preheat the oven to 200°C. Now start the batter: whisk the eggs.

Add milk and cream, whisk together.

Add mustard and whisk again. I used Dijon, but regular mustard works too.

Sift the flour into the egg mixture. Mix well.

Add 2/3 of the cheese to the batter and mix.

Grease the baking dish with vegetable or butter.

Place the broccoli.

Sprinkle the remaining cheese on top and place in the preheated oven for 30–40 minutes, or until the casserole is set and nicely golden.
