Preheat the oven to 200°C. Peel and wash the potatoes, then slice them thinly (2–3 mm). Rinse the slices well to remove the starch and let them drain.

Meanwhile, slice the mushrooms.

Heat oil in a thick-bottomed frying pan over medium heat. Add the potatoes and stir with a wooden spoon so all slices are coated with oil. Add salt and pepper.

Continue stirring until the potato slices become sticky — this means they’re releasing starch. At the same time, heat a pan for the mushrooms, add 1 tbsp of olive oil, add the mushrooms, and season with salt.

Once the potato slices are sticky, add garlic and pour in the cream — just enough to cover the potatoes, but no more. The flavor will be less fatty but still rich and creamy.

Reduce the heat and cook the potatoes for about five more minutes until the cream thickens slightly.

Remove the cooked mushrooms from the heat.

Finely chop the parsley. Remove the skillet with potatoes from the heat and taste the dish. At this point, you can add more salt or pepper if needed. Stir in the mushrooms and parsley.

Transfer everything into a baking dish. Bake in the oven for 20–30 minutes. That’s it! The dish is ready!
