Zest the limes, chop the parsley, and slice the garlic thinly across. Grate the ginger. Cut the chili pepper in half lengthwise and then slice into strips. You can leave the seeds in the marinade if you want it spicier.

Place the zest, garlic, ginger, parsley, and pepper in a mortar and crush with a pestle into a paste.

Squeeze in the lime juice, add olive oil, salt, and black pepper, then mix well. The marinade is ready.

Cut the loin into 4 bone-in chops. Rub with the marinade and place in a dish to marinate for 40–45 minutes. Cover the dish with plastic wrap.

Heat a bit of oil in a thick-bottomed pan to just above medium temperature. Remove large pieces of marinade from the chops to avoid burning and fry on both sides until golden — about 2 minutes per side.

Place the meat in a baking dish. Pour over the remaining marinade and bake in the oven until done, about 20 minutes. Since my dish is ceramic, I place it in a cold oven, heat to 180°C, and bake.
