Knead the dough and let it rise for 30 minutes, punch down and let rise again. Meanwhile, prepare the filling: boil poppy seeds with sugar. Divide dough in half, roll out, brush with butter, and sprinkle with sugar.

Spread the poppy seeds evenly over the dough.

Roll the dough into a log, trim ends and form a rose. Join ends into a ring, make cuts with scissors, turn leaves upward.

Use the cut ends to make a rose: one inside, the other on top. This is how it should look.

Let rise in a warm place, brush with egg yolk, and bake for 15–20 minutes at 170°C until golden brown. The pie is ready!
