Lightly tenderize the meat pieces — just a bit. This softens the fibers and prevents toughness during frying. Wrap each piece with a strip of bacon and tie with string.

Season with salt and pepper.

Heat the pan well and pour in a bit of olive oil. Season the meat right before placing it in the pan. Press the meat down and don’t move it! Fry for about 2 minutes.

Flip and cook the other side for another 2 minutes. For medium rare, that’s enough. For well done, fry 3–3.5 minutes. Don’t move the meat to get a good crust. Sear the sides too, then add garlic and butter.

Pour butter over the meat. Add sliced onion and cook for a few minutes until soft. Pour the sauce over the meat.

Sprinkle meat with rum or cognac. Light it and wait for the alcohol to burn off. Transfer meat to a rack.

Make the sauce: pour some red wine and heavy cream into the same pan where the meat was cooked.

Let it simmer over low heat until thickened. The meat is ready to serve — with salad or any side. The sauce is rich and goes perfectly with the medallions.
