White Wine Jelly with Bananas

Mix sugar and gelatin in a saucepan. Add about 1/2 cup of wine and let sit for a few minutes.

Pour in the remaining wine, stir and place over low heat. Bring to a boil and stir, then simmer for 1–2 minutes until the sugar and gelatin dissolve completely. Remove from heat and cool.

Peel the bananas and slice them into rounds. Place them into silicone muffin molds.

Add lemon juice to the saucepan, stir, and pour over the bananas. Refrigerate for 2 hours or until fully set.

Before serving, dip the bottom of the mold in hot water for a few seconds, then invert the jelly onto a plate.
