Step 1
Put 2 pots of water to boil: one for broccoli, the other for carrots and green beans. Wash all vegetables and herbs. Separate broccoli into florets. Cook broccoli by dropping it into boiling salted water and boiling for about 7-10 minutes until done.
Step 2
Add beans and carrots to boiling water. Cook for about 10 minutes until done.
Step 3
Put cooked carrots on a plate, drain beans and broccoli in a colander and rinse with ice water. This will help vegetables retain their beautiful green color. Trim ends off beans and cut into 3-4 pieces.
Step 4
Heat oil in a pan. Squeeze garlic into the oil and reduce heat to minimum. Immediately add vegetables to the pan and stir gently. Fry for 2-3 minutes.
Step 5
While vegetables are in the pan, chop parsley, preferably very finely.
Step 6
Transfer vegetables to a deep bowl, add salt, parsley and lemon juice. Mix gently.
