Blackberry jam is a fragrant and healthy treat that can be served with toast, pancakes or used as a filling for baked goods. Thanks to the natural pectin in the berries, the jam turns out thick without adding gelatin.

Sort and rinse berries (use a colander). Drain. Mix berries with sugar and gelling agent in a large pot, cover, and let sit for 4 hours. Bring to a boil and cook for 3–5 minutes, stirring. Add lemon juice. Pour hot jam into clean jars, seal, flip upside down, and cool.
