Peel the pumpkin, remove the seeds, and cut into small pieces.

Cook sugar syrup from water and sugar, strain it and place the pumpkin pieces into the hot syrup. Bring to a boil and simmer over low heat for about 5 minutes. Then let it cool to room temperature.

Add a couple of cinnamon sticks, cloves, and squeeze in orange juice. Repeat the boil-cool procedure 6–7 times until the pumpkin pieces become translucent.

Now let the syrup drain.

Once the syrup has drained, spread the pumpkin on waxed baking paper and dry at room temperature or in an oven at 50°C with a fan.

Once the candied pumpkin has dried, you can transfer it to a sealed container and use as needed.
