Beat the egg whites, gradually adding sugar, until stiff glossy peaks form. Separately, whip the cream until thick.

Heat sugar in a pan until it turns golden yellow.

Add chopped walnuts to the sugar and stir with a spoon to coat them in the glaze. Spread on foil and let cool.

Gently mix together the cream, sour cream, sherry, honey, cooled nuts, and whipped egg whites.

Wrap the molds with parchment paper (2 layers), allowing it to extend 3 cm above the edge. Secure with tape. Fill the molds so the mixture sits 2 cm above the rim and freeze for 2–3 hours.

Remove the mold from the freezer 15 minutes before serving. Remove the paper and generously sprinkle the parfait with powdered sugar and cocoa. Garnish with walnut halves.
