Clean the fish. If it doesn’t fit in the pan, cut off the head. If keeping the head, make sure to remove the gills and eyes.

Lightly toast the almond flakes in a pan for 2–5 minutes.

Pat the fish dry with a paper towel (to create a nice crust when frying). Salt more inside than outside (considering additional seasoning will be added during frying with almonds).

Place the seabass on a preheated, oiled skillet, sprinkle with almond flakes and salt. Fry until a crust forms.

Flip to the other side, season with salt and pepper, and fry until cooked through. Serve with lemon and garnish as you like :) Pairs well with beer or white wine.
