Sift all dry ingredients into a bowl: oat flour, baking powder, sugar, and salt.

In another bowl, mix all liquid ingredients: milk, eggs, vegetable oil, and vanilla extract (if using vanilla sugar or powder, mix it with dry ingredients). Lightly whisk together.

Pour the wet ingredients into the dry ones.

Mix well. While mixing the batter, heat a skillet, lightly grease it with oil, and let it get hot.

Start cooking pancakes right away. Pour the batter onto the skillet (I use a 60 ml measuring cup — makes about 12 pancakes). Wait for bubbles to form on the surface.

Flip immediately with a spatula and cook for another 20–30 seconds.

That’s it! The pancakes turned out fluffy and light — and most importantly, healthy! I served them with banana rings and almonds, drizzled with honey. Bananas, nuts, and honey go great together, but you can also serve them with strawberry sauce or fresh berries and honey or maple syrup.
