Finely chop onion and garlic.

In a 2-liter saucepan, heat 3 tbsp olive oil and sauté onion and garlic over medium heat until onion is soft and slightly golden.

While onion is frying, slice zucchini and potatoes thinly.

Add zucchini and potatoes to the saucepan with onion, mix well, reduce heat to minimum, cover and simmer for about 20-25 minutes until vegetables are fully cooked.

Puree the cooked vegetables with an immersion blender (you can use a regular blender, but immersion is more convenient and faster). Season with salt and pepper to taste.
