Step 1
Finely chop the onion, crush the garlic. Place in a pot and sauté with 2 tablespoons of olive oil.

Meanwhile, wash and slice the carrots and celery. Add them to the onion and garlic and continue cooking.
Step 3
Place the chicken breasts on top of the vegetables in the pot, along with bay leaf, basil, parsley, thyme, and pepper. Pour in 8 cups of water.
Step 4
Cover with a lid and bring to a boil over high heat, then reduce to a simmer and cook for about an hour. Make sure the water stays gently boiling.
Step 5
After an hour, remove the chicken from the pot and shred the breasts using two forks.
Step 6
Salt the broth. Add the noodles and cook for 7 minutes over high heat. Return the chicken to the pot, add 2 more cups of water. Taste and adjust salt if needed.
