Beat the egg whites, gradually adding sugar. Whip until the mixture is smooth but firm. Line a baking tray with parchment paper. Using a piping bag with decorative tips (or just a spoon), shape the mixture.

Dry in the oven at 100–110°C for 40 minutes to 3 hours depending on the size. Turn off the oven. Open the door. Let cool completely without removing. Garnish with berries, chocolate melted in a double boiler, whipped cream, or frosting.
