Line the baking dish with parchment paper and rub with butter.

Roll out two sheets of dough. Place the filling on one and cover it with the other, pressing it down.

Remove the skin from the fish and, if necessary, pull out the bones with tweezers.

Chop the onion. Boil the eggs until hard.

The rice was cooked in advance and has cooled. Layer it: rice, then onion and eggs.

And finally, a layer of fish.

Cover with the second half of the dough. Pinch the edges nicely — for appearance. Brush the top with butter and sprinkle with sugar. Make a few holes with a knife to let steam escape.

Put it in the oven at 180°C and forget it for 40 minutes. Then take it out and let it rest for another 10 minutes.
