Finely chop the onion and garlic; leave the pepper whole.

Place the shrimp shells (reserve the meat), onion, garlic, ginger, and pepper in a pan. Simmer for about 10 minutes over low heat.

Then add chicken broth and simmer for another 15 minutes over low heat.

Peel the tomatoes and cut them into small cubes.

Strain the soup. Keep the broth — that’s what we need. The vegetables and shells can be discarded — they’ve done their job.

Place the shrimp broth over heat, add the diced tomatoes, and simmer for 15 minutes.

After 15 minutes, add the coconut milk to the soup.

Then add the shrimp to the soup and pour in the lemon juice. Cook for another 5 minutes, then remove from heat.
