Caramel apples: crispy dessert

Prepare the batter by mixing flour, a beaten egg, and cold water (2 tbsp). Mix thoroughly.

Peel the apples, remove the core, slice lengthwise, and coat with flour.

Step 3

Shake off excess flour from the apples, dip them into the batter and mix well to coat each slice.

Step 4

Deep-fry the apples at 190°C until golden, adding them one by one and stirring constantly to prevent sticking. Once done, place them on a paper towel to drain excess oil.

Step 5

Heat a couple of tablespoons of sesame oil (or a mix of sesame and neutral oil if using dark sesame oil) in a skillet over medium heat. Add sugar and stir until it caramelizes. Once golden, reduce heat to low, add sesame seeds and the battered fried apples. Stir to coat in caramel. Transfer to a lightly oiled plate. Before serving, dip each slice briefly in ice water to cool the caramel and make it brittle.
