First, cook the buckwheat. The perfect ratio is 2 cups of water to 1 cup of groats. Add buckwheat to boiling salted water, then reduce heat to low. Important: do NOT stir the groats after adding them to the water.

Cook until all water is absorbed. To check, gently move the porridge with a knife to see the bottom. If there’s no water left, turn off the heat and cover the pot.

While the porridge is cooking, chop the mushrooms and onion.

Sauté the onion in a small amount of oil (preferably olive) until lightly browned.

Add the mushrooms and continue frying for about 5–7 minutes.

Finely chop the parsley.

It’s very simple: add the mushrooms and parsley to the buckwheat and gently mix everything together. That’s it! Delicious side dish is ready!
