Potato pancakes with cheese - crispy fritters

Potato pancakes with cheese are a traditional Belarusian dish made from grated potatoes with the addition of cheese. Potatoes are grated on a fine grater, mixed with egg, flour and grated cheese, then fried until crispy. Cheese gives pancakes a special tenderness and rich flavor. Served hot with sour cream, mushroom sauce or pickles. Great option for breakfast or hearty snack.
