In a saucepan, mix sugar with chocolate (240 g) and butter. Place over very low heat (or a water bath) to melt the sugar and chocolate and get a smooth mass.

Add flour and salt, mix thoroughly. Remove from heat.

Beat the eggs with vanilla.

Add to the flour mixture and mix well. Line a baking form with parchment paper and pour in the batter. Place sliced cherries on top.

Bake in a preheated oven (175°C) for 30–35 minutes. Check doneness with a toothpick.

Melt the remaining chocolate (120 g) with vegetable oil in the microwave, in 30-second intervals, stirring in between. Drizzle the blondie with glaze. Let cool in the form for about 10 minutes before slicing and serving.
