Boil potatoes in their skins for 10–12 minutes until half-cooked. Drain, cool, and peel.
Cut each in half (don’t mix up the halves) and scoop out the middle (save it for patties — see later).
A melon baller or a sharpened teaspoon works best for this.

While the potatoes were cooking, we sautéed the ground meat in oil, adding salt, pepper, and finely chopped onion.
Cook until ready and let cool. (Set aside some for patties — see end of recipe.)

Mix the meat with grated cheese and herbs.

Take a pack of sliced bacon.

Stuff the potato halves, press them together, wrap tightly with bacon, and secure with a toothpick.
Place on a baking tray greased with oil and bake in a preheated oven for about 30 minutes at 180–200°C.
Serve hot.
Serve separately with sour cream, tomato or other sauce, herbs, and your favorite drinks.

While potatoes are baking, mix potato scraps with the remaining sautéed filling and herbs, mash well, shape into patties (optionally adding a bit of butter inside each), coat in egg, then breadcrumbs (or strips of white bread), and lightly fry on both sides. Eat immediately while waiting for the main dish to bake.
