Beef is very lean meat, so some extra fat like smoked pork belly won’t hurt. Bacon also gives the meat a smoky flavor. That’s why it’s best not to overdo the spices—they could overpower the flavor. Cut the meat into medium-sized pieces.

Add chopped onion, slightly crushed with coarse sea salt, and pepper. I’m not describing a marinade, because it’s not the main point of the recipe. Let the meat marinate for 5–6 hours in a cool place.

Slice the bacon into thin long strips and wrap it around the meat pieces. Thread onto skewers in a way that the bacon doesn’t come undone. My bacon slices wrapped a little more than halfway around the meat.

Grill over hot coals, turning the skewers constantly. Be sure to have water ready, as the fat from the bacon drips onto the coals and can cause flare-ups.
