Step 1
To prepare the marinade, mix soy sauce, lemon juice, and dry white wine. Add finely grated ginger and garlic mashed in a mortar.
Step 2
Clean the fish thoroughly, remove the gills and cut off the fins. Rinse with cold water and pat dry with paper towels. Make several cuts on the skin to help the marinade soak in. Place the dorado in the marinade (a strong plastic bag works well).
Step 3
Line a baking tray with foil and lightly grease it with oil. Bake the fish in the oven at 200°C for 20–25 minutes.
