Take 3 medium-sized gilthead bream (one per person), trim off all fins. You can do this with sharp scissors, but I used a knife, so it wasn’t very neat. Usually, the fish is sold already scaled, but I recommend cleaning it again, as some scales are always left. Be sure to wash the fish. Make a cut along the belly and remove all the guts.

Before baking, pat the fish dry — I just used paper towels. Rub with salt and pepper all over, including inside.

Slice the onion into thin half-rings.

Chop 2 tomatoes into small pieces.

Fry the onion until golden, then add the tomatoes and yellow bell pepper cut into thin strips.

When everything is stewed (about 5–10 minutes total), add chopped ginger root. I sliced it into thin rounds across the grain, but grating is better so it’s less noticeable in the dish.

Stuff the fish with the vegetable mixture.

Carefully place the bream on a baking tray, brush lightly with oil to help it brown nicely.

Place in a preheated oven at 200°C and wait 30–35 minutes. The fish should be nicely browned.
