Step 1
For the batter, combine everything except butter, apples, and cinnamon. Mix well to remove lumps.

Peel and core the apples, cut them into small, flat pieces for easier layering in the fritters.

Mix apples into the batter, add a couple teaspoons of cinnamon. You can also add vanilla sugar or lemon zest if desired.
Step 4
Fry the fritters on medium heat in a small amount of oil. They may still absorb a lot—that’s normal.
Step 5
When flipping, the fritters should rise well thanks to baking powder. Even if they deflate a bit, they’ll remain soft and fluffy.
