Wash berries, place in a pot, add 1/4 cup water. Boil for 10 minutes.

Mash the berries and strain through a sieve to remove seeds and skin.

Beat berry puree with sugar.

Beat chilled egg white until stiff peaks form and fold into the berry puree.

Spread the mixture onto a baking sheet (I lined the bottom with parchment paper). The layer was about 1.5 cm thick. Place the tray in the oven and bake at 100°C for 6–8 hours. Every 2 hours, I took the tray out to cool the pastila, then returned it to the oven.

The finished pastila should be firm and springy to the touch. Cut into pieces and roll in sugar or powdered sugar.
