Start by finely shredding the cabbage, adding a bit of olive oil to a thick-bottomed pot, and setting it over low heat.

Dice the zucchini and add to the cabbage. If the zucchini are young, there’s no need to peel or remove the seeds.

While the cabbage and zucchini are cooking, grate the carrot, finely slice the onion, and lightly sauté the vegetables in a pan with olive oil.

When the zucchini and cabbage are nearly done (about 10–15 minutes in), add peeled and diced tomatoes.

Add the sautéed onions and carrots, minced garlic, and salt.

If desired, you can add dried herbs and ground pepper. I used a mix of colored pepper and Italian herbs (rosemary, savory, paprika, thyme, basil, tarragon, pink pepper, and salt). It turned out delicious — especially with finely chopped dill!
