Wash, peel and cut potatoes, apple and onion into small cubes.

Melt butter in a saucepan and fry onions until golden. Add potatoes and apple to the onions and sauté over medium heat, stirring constantly, for 4-5 minutes. Salt and add wine to the vegetables.

Lightly crush green peppercorns (not finely) and add to the soup, reserving a pinch for garnish, and add to the vegetables.

Sauté vegetables for 5 minutes then add broth and simmer gently for 20 minutes. Lightly toast almond slices in a hot pan. Finely chop parsley. Purée the soup, adding cream.

Ladle into bowls. Garnish with almonds, green pepper and parsley. Enjoy your meal!
