Clafoutis is a French dessert made with fruits or berries that are covered with a batter very similar to pancake batter and baked in the oven. It's also called a lazy pie because the recipe is indeed very simple. You can prepare the batter the night before and refrigerate it, and in the morning all you have to do is pour it over the fruit or berries and put it in the oven. You can also soak the raisins in cognac the night before (as I did). But you can do without alcohol if you don't like it, but honestly, with it the taste and aroma are much more interesting and there's no omelet flavor at all.

Mix flour, sugar and salt.

Add eggs, beat with a mixer.

Add milk, beat. Let the finished batter rest for 20-30 minutes.

Meanwhile, let's prepare the apples. Peel and core them. Cut into thin slices. Sprinkle with lemon juice to prevent the apples from browning.

In a greased and floured 23cm pan, place the apples mixed with raisins. Pour the remaining cognac from the raisins into the batter. Mix and pour the batter over the apples.

Place the pie in a preheated oven at 200°C for about 40 minutes.

Done! The flognarde or clafoutis is ready. Let it cool slightly so the pie settles and the batter structure firms up. You can dust with powdered sugar before serving.
