Step 1
Place softened unsalted butter (at room temperature) in a mixing bowl.
Add powdered sugar (or confectioners' sugar), a pinch of salt, and freshly grated orange zest.
Using an electric mixer or whisk, beat on medium speed for 2–3 minutes until light, fluffy, and creamy.
Tip:
For best results, ensure the butter is softened but not melted.
If mixing by hand, use a wooden spoon and stir vigorously in one direction.
Step 2
Add 2 large eggs (room temperature) one at a time to the butter mixture. Beat each egg for 30 seconds before adding the next to maintain a smooth consistency. Sift together 150g all-purpose flour, 1 tsp baking powder and 50g almond flour. Gradually fold into the wet mixture using a spatula in bottom-to-top motions. Pour 60ml of freshly squeezed orange juice in a thin stream. Mix for 1-2 minutes until no lumps remain. Tip: For a lighter texture, use a mixer on low speed. If the batter is too thick, add 1 tbsp of juice.
Step 3
Preheat the waffle iron to medium temperature and lightly grease both plates with vegetable oil using a pastry brush. Carefully pour the batter onto the center of the bottom plate, spreading it almost to the edges with a spatula while leaving a small gap. Close the lid and bake for 5-6 minutes until golden brown and crispy. Gently remove the ready waffles using a wooden spatula.
