Eggplants with minced meat baked in the oven is a hearty and flavorful dish where eggplants serve as "boats" for the filling of ground meat with onions, carrots and spices. Baked under a cheese crust until golden. The dish turns out juicy because the eggplants are pre-baked separately. Pairs well with fresh vegetables and herbs.

Garlic 2 clove
Minced meat 500 gram
Pepper to taste
Salt to taste
Sour cream 3 tablespoon

Make lengthwise cuts in eggplants, then slice into 0.5-1 cm thick rounds.

Grease the baking dish with butter. Add salt, black pepper, optionally onion, garlic, herbs, and egg to the minced meat. My choice is salt and black pepper only. Make patties from the minced meat to match the size of the eggplant slices and arrange them in the dish alternately. I didn't have enough eggplants for the whole dish, so I added tomatoes and zucchini. Pour the sauce over (dissolve tomato paste and sour cream in a cup of broth, add grated garlic).
