Step 1
Crush 1/2 vanilla pod and mix with 1/3 cup of sugar. Set aside.
Step 2
Place 2/3 cup sugar, 1/3 cup water, and 1 tsp cinnamon in a saucepan. Stir. Bring to a boil over medium heat before adding almonds.
Step 3
Add almonds to the boiling sugar mixture. Stir.
Step 4
The sugar mixture should boil away completely. Reduce heat to low.
Step 5
Add another 1/3 cup of sugar and stir. Wait until the sugar begins to melt.
Step 6
The sugar is starting to melt. Stir to evenly roast the almonds.
Step 7
Spread the almonds on a flat heat-resistant surface. Separate any that have stuck together.
