Step 1
Cook the pasta according to package instructions. Fresh pasta will be ready in 2–3 minutes. Drain and set aside. Cook shrimp for 4 minutes or until done.
Step 2
Melt butter in a skillet over medium heat. Add shrimp, garlic, and red pepper to the pan.
Step 3
Add cooked pasta, lemon juice and zest, black pepper, and spinach. The spinach will shrink significantly, so don’t worry if it looks like a lot.
Step 4
Simmer for 3 minutes or until the spinach is cooked. Serve drizzled with lemon juice. Pairs well with chilled white Italian wine.
