Step 1
Prepare the filling. Avocado: Mash the avocado pulp in a bowl with a fork. Immediately drizzle with lime juice, season with salt and pepper. The lime will prevent browning. Tomatoes: Slice thinly and place on a paper towel to remove excess juice.

Assemble the sandwich (important!). Brush the outer sides of both bread slices with oil or butter — this will give a golden and crispy crust. Spread the avocado mash onto the unoiled side of one bread slice. Place the tomato slices and herbs on top of the avocado. This layering order (avocado on the bottom) will create a barrier and prevent the bread from getting soggy from the tomato juice. Cover with the second bread slice, oiled side facing outward, and press down lightly.
Step 3
Cooking in the sandwich maker.
Preheat the closed sandwich maker for 2-3 minutes.
Carefully place the assembled sandwich in the center of the bottom plate.
Close the lid and latch it (if there is a lock). Do not press down from above.
Cook for 3-5 minutes until the sandwich turns golden brown and crispy.
The cooking time depends on the appliance's power and your desired level of crispiness.
Step 4
Serving. Carefully open the sandwich maker and remove the sandwich with a spatula. Let it cool for 1 minute to allow the filling to "set". Serve immediately while still crispy!
