Classic American potato salad

Classic American potato salad is a must-have for any picnic or BBQ in the USA. Made from boiled potatoes, eggs, celery, onions and mayonnaise. Often add mustard, dill and sweet pickles. The main difference from European versions is the creamy texture due to the generous amount of mayonnaise. Served chilled, goes perfectly with grilled meat and barbecue.

| Bacon | 100 gram |
| French mustard | 1 tablespoon |
| gherkins | 4 piece |
| Ground black pepper | to taste |
| new potatoes | 1 kilogram |
| Salt | to taste |
| Vegetable oil | 3 tablespoon |
| white bulb onion | 1 piece |
Step 1
Scrub potatoes, place whole in a pot with salted boiling water, bring to boil and cook until tender, 25-30 min.
Step 2
Meanwhile cut bacon into thin strips, fry in a dry heated pan over medium heat until fat renders and bacon becomes crispy. Place cooked bacon on paper towels, reserve fat.
Step 3
Slice peeled onion into very thin quarter-rings. Cut pickles into thin rounds. Pour vegetable oil and vinegar into warm pan with fat. Add mustard, salt and pepper, mix. Drain cooked potatoes, let cool slightly, slice (carefully to avoid burns) and place in bowl. Pour hot dressing over potatoes and let cool. Mix potatoes with onion, pickles and bacon crumbled by hand, then serve.
