Classic Italian pasta originating from Amatrice. Made with guanciale (can substitute pancetta), tomato sauce, chili pepper and pecorino cheese. Best served with bucatini or spaghetti. Key to authenticity is using quality ingredients and no cream.

spaghetti 400 gram
Tomatoes 1 kilogram

Let’s start by cutting our brisket into small cubes.

Peel the tomatoes. Cut them into small cubes.

Heat a little olive oil in a frying pan.

Fry the brisket for 3–4 minutes over medium heat. Then add finely chopped onion and sauté together for a couple more minutes.

Boil the spaghetti until al dente — remove it slightly before it’s fully cooked. Drain in a colander.

When the onion and bacon are nicely browned, add the finely chopped tomatoes. Salt, pepper, and simmer for about 5 minutes.

Add the spaghetti to the pan, stir, heat on low for 1–2 minutes, then remove from heat. Serve immediately.
