Step 1
Preheat oven to 175°C. Line 2 trays with parchment. Mix flour and cocoa. Beat butter, sugar, flour mix, and salt. Add yolks and vanilla, beat again.
Step 2
Divide the dough into 2 parts and roll each out. If too soft, wrap in plastic and chill (30 mins).

Cut the rolled-out dough into rectangles (total of 24).
Step 4
Place the cookies on the baking trays and bake for 16–18 minutes (until firm in the center). Cool.
Step 5
On the same baking tray, evenly spread the slightly softened ice cream.
Step 6
Freeze until the ice cream hardens, then cut it into 12 equal parts (use a cookie as a stencil).
Step 7
Place a layer of ice cream between two identical cookies and wrap each sandwich in plastic wrap (to keep its shape). Freeze all the sandwiches.
