Sambuca is a light fruit dessert made from puree with addition of egg whites and sugar. Has tender airy texture. Can be made from apples, apricots, berries. Serve chilled.

Gelatin 15 gram
Strawberry 400 gram
Sugar 80 gram

Soak the gelatin in water.

To prepare strawberry puree, simply blend some strawberries in a blender.

Mix the strawberry puree with sugar and heat.

Heat the gelatin until it dissolves completely.

Whip the strawberry puree with sugar using a mixer, add gelatin, and continue whipping for 5–10 minutes until the mixture increases in volume several times, becomes lighter and thicker.

Wash, dry, and quarter the remaining strawberries. Place the berries at the bottom of chilled glasses. Reserve a few for decoration.

Spoon the mixture over the strawberries and place the dessert in the refrigerator for 1 hour.

Before serving, decorate with strawberries; optionally drizzle with strawberry or chocolate syrup.
